Boxing Day Bubble & Squeak

Happy Boxing Day, everyone! I hope you’ve all enjoyed a fantastic Christmas Day with your loved ones and friends.

Today I’ll be whipping up a huge batch of Bubble & Squeak with yesterday’s leftovers for the family. I start by making a mix of leftover roast potatoes and Brussels sprouts (the most important two ingredients), carrots, cabbage and parsnips in a mixing bowl, all nice and chunky. This makes up the actual Bubble and Squeak, which I shallow fry in the pan with a bit of goose fat. Once it’s hot, that’s when I really go to town. On top of the delicious fried, starchy goodness, I put some of the cuts of cold Turkey, Beef and Gammon, some lovely thick cut grilled bacon cooked to a crisp, leftover stuffing and Yorkshire puddings covered in gravy, some cheese off the cheese board with some chutney, leftover Pigs in Blankets, a handful of roasted chestnuts, and I even top it off with some fried or scrambled egg. To me, it’s as indulgent and special as the roast the day before. Some of my family like to have the Bubble and Squeak as-is, just the vegetables and Potatoes and a bit of Brown sauce, and some do as I do and make a real feast of it.

I’m sure even if you don’t you’ll be working your way through some sort of leftovers. Who doesn’t love a bit of Turkey Sandwich? I’m sure there’s also a few Chocolates that need seeing to, as well. Make sure to wash them all down with a lovely glass of port 😉

    Boxing Day is a fabulous tradition. Wish we had it here in the US. It’s a regular day at work for me. Can’t say that I’m a fan of brussels sprouts (or any cabbage), but I do look forward to all the leftovers from the rib roast we had yesterday.

    Love bubble and squeak just as it is with cold meats extra creamy mash pickles and chutneys yummm . Just waiting for kids grandchildren and dogs to ascend , cold buffet today . Enjoy your day x

    The bubble and squeak is essential. I had it with the halloumi fries that never got cooked. All the unopened chocolates are going to the food bank this year along with other things that will store. May as well give someone a boost for New Year as well as essentials. It takes up to a year for any benefit payment to arrive these days if you lose your job, as the Thomas Cook people have found. Sobering thought when it could be any of us.

    What are “left over” roast potatoes?😀 The recipe sounds amazing so I will have to cook some more!
