I’ll be using today to catch a breath and relax after all the picking and packing of orders yesterday. Phew!

Relaxing on the sofa with a book is the ticket, I think. And I’m making a delicious chicken stew for dinner. It’s a recipe that I’ve cobbled together over the years, and it’s very simple. Chicken Thighs (browned and sealed in the pan first), potato, onion, celery, carrot, some nice rough greens (kale works well), lots of pearl barley, with fresh thyme and rosemary, and optionally half a bottle of rich dark ale, all in a delicious chicken bone stock in the pot.

Bring it to the boil, then simmer for one hour in the pot to reduce. I recommend drinking the rest of your delicious beer of choice, if you used it, at this point in the process. It’ll help raise your appetite and lower your expectations 😉 . Then pour it into a deep roasting dish to cook for another hour in the oven on a lower heat to finish. This is when it turns all lovely and gooey. Once it’s finished, the meat should just melt away from the bone 🍲🍲🍲

Eat it straight out of the deep oven dish, with big slabs of buttered crusty bread. Or if you’re looking for a healthier option, make the stew with chicken breast instead of thighs, and pile on top of wholegrain brown rice to serve. It’s splendid in this cold weather! It’ll keep for your lunch tomorrow, too. I think it tastes better on the second day. Often the way with a stew, I find. The same is true of Chili, or a good Bolognese sauce. Always tastes just a little better the next day.

Right then, Crafters, enough waffle from me. Enjoy your Sunday. I’m off to get the stew started before I plonk down on the sofa. I’ve made my own mouth water with all this recipe talk!

    Hope you managed a good rest. after the blog. Who needs a gym with all that packing? Thanks for the recipe – I was wondering what to give the carnivores at Christmas. Well, not on The Day, obviously. You’re right that stews taste better the next day. Perhaps it is just that we don’t have all the cooking from scratch then.
